Beetroot Salad And Broccoli Salad Recipes
A few months ago I bought a new kitchen appliance which came with it’s own recipe book. In it is two salad recipes that have become a weekly staple for me – they are really quick and easy to make and super healthy. With the warm weather now here, it’s a great time to test out some new salad recipes, so I thought I would share these two with you.
Now you don’t need the appliance I bought to make these, but you will need some kind of food processor. Please note that these are not my original recipes, but are recipes from Thermomix.
Beetroot Salad
Ingredients:
- 400g raw beetroot, peeled and quartered
- 1 large carrot, roughly chopped
- 1/2 small red onion, quartered
- 1 green apple
- Handful coriander leaves
- Tablespoon olive oil
- 1/2 lemon, juiced
Instructions:
Place all ingredients into a food processor and chop for approximately 5 seconds on a medium speed. Scrape down the sides of the food processor and chop again for another couple of seconds until there are no large pieces remaining. Serves approximately 4 for lunch or 8 for a side dish.
Broccoli Salad
The idea of a raw broccoli salad did not initially sound too appetising to me, but I thought I would test it out. Im glad I did as it is really tasty and super healthy!
Ingredients:
- 250g broccoli, roughly chopped
- 1 large carrot, roughly chopped
- 1 apple, peeled, seeded and cut into quarters
- 1/2 onion, quartered
- 100g natural no fat/low fat yoghurt
- 1/2 lemon, juiced
- Salt and pepper to taste
Instructions:
Place all ingredients into a food processor and chop for approximately 8 seconds on a medium speed. Scrape down the sides of the food processor and chop again for another couple of seconds until there are no large pieces remaining. Serves approximately 2-3 for lunch or 6 for a side dish.
I love both these recipes and when I have them for lunch, I will mix in a small tin of tuna or salmon. These salads are also great to take along to a BBQ.
